    Josef ("Seppi") Renggli's Paupiettes de sole aux poireaux = Sole Mousse in Leek Leaves, used flounder, very good. Drom John failed to make the Beurre blanc = White Butter Sauce thick enough.

    Reuben sandwiches (pg 291) is a classic Reuben on rye with Russian dressing. Be ambitious and make your own corned beef and bread ... the results are superb.

    The stories are memorable and yet they come at such a rapid pace you wonder if Claiborne is avoiding the deep self-analysis that’d make this book a classic instead of a long-forgotten relic.

    The book itself may not be a masterpiece, but Claiborne certainly was a character and this book is a window into that troubled character’s soul.
