      This is quick & easy to prepare. I cut back on the rather large amount (1/4 cup) of toasted sesame oil, but perhaps should not have, as it was rather bland tasting.

      A simple, quick & satisfying meal with bright flavor & a little heat. I used some leftover lite coconut milk for half the cooking liquid, & did not add actual dried coconut. Also used dried Thai basil during cooking of the rice & also some cilantro at the end to brighten it up. Since it is cooked in a skillet, would recommend stirring the rice at least during cooking to make sure the top layer of rice isn't dry.

      Super easy and pretty decent. I didn't have bean sprouts couldn't find them at the store so sautéed some zucchini and added it. Any veggies would work with us.

  • One hot potato soup

      I made this because I didn't have leeks or scallions. Super easy, plenty of flavor, and the kids loved it. A little shredded cheddar over the top is delicious.

  • Quinoa salad with roasted asparagus, white beans, and red peppers

      A very substantial salad, with an interesting combination of flavors. Would make a good picnic side dish. I enjoyed it a great deal; hubby not so much, but he is no fan of quinoa or celery, although I only used half the amount of celery. Used lime olive oil since it was on hand, and basil. Will definitely make again.

      We didn't have the radishes. Soup was good, although I was surprised the kids didn't like it. We had to up the seasoning. For the adults, we mixed in some siracha, which was quite tasty.
