      This was a great weeknight meal. I velveted the pork, which was a great decision. I also added some bell peppers, spinach, and red onion. Next time I'll up the veggies and reduce the soy sauce down to 1/3 or 1/4 cup, it ended up being a lot saltier than I wanted.

      Really yummy but be warned, it takes a lot of dishes and a lot of concentration to pull off. This is not a recipe you can ignore while it cooks. For me, and I admit, I'm a slow cooker, it took about 90 minutes but some of that was waiting for the water to come to a boil.

      Would give this recipe 4.5. Really good but we used ingredients we had leftover from the week. We replaced cotija with cheddar. Think the cotija and crema Fresca would have made this a 5.
