    As a home cook who is comfortable with executing many types of dishes and cuisines, I am always looking to learn more. I just recently purchased this book and the "advanced" version to continue on that path and find so far, that there are a great variety of recipes, tips and techniques to learn from. I am looking forward to cooking through these recipes and techniques over the coming year. That being said, the one major flaw in these books for me is that the recipes or "courses" seldom give ideas on what to serve the recipe with. Can I come up with ideas? Of course. But I wish in the "courses" sections they would have shared ideas of what other recipes in the book would go great with it, from the sides to the dessert even. It would have been nice in some cases to have ideas to execute a full meal if needed. A great example of that Is in the "The Essential New York Times Cookbook". Other than than, I know I will learn from this book.

  • Pan-roasted Brussels sprouts with lemon and pecorino Romano

      I love this cooking technique for Brussels Sprouts, and it is surprisingly forgiving. If the bottoms are getting too dark and they aren’t tender enough, just turn off the heat and put the lid back on. The one downside is that unlike a sheet pan, you aren’t going to make them for a crowd.

      Stumbled across this recipe as I was flipping through this book and realized I had the right ingredients in the right amounts on hand - love it when that happens! These are delicious and a good basic recipe to have in the rotation.

  • Sweet potato crunch

      We thought this was a really nice sweet potato dish for Thanksgiving. I added some chopped pecans in the topping and baked it and really liked the added crunch.

      To add to my prior note on this recipe, I would like to add that I didn’t think the watercress was especially necessary, I would make it with any salad green. Also, I did not add hazelnuts or mint at the end, though I think walnuts would do just as well. But the salmon, avocado and grapefruit work really well together for a winter salad!

      If you love a Tom Kha Gai - this soup is for you. Excellent! The key to execute this recipe is to for sure have all the the ingredients prepped and ready to go before starting.

      For some reason I can’t rate this recipe, but this is so delicious and easy to make! Highly recommend the garnishes, I feel like those bring the whole dish together. 10/10

      Very good! Added a serrano chile and used a high speed blender instead so it was a smoother sauce. Served on steak. Next time I will roast the garlic first so it tastes less like raw garlic.

      Made with Hatch chiles instead of poblanos and jalapeños. Flavor came out great, but I cored, seeded and de-membraned all the chiles ad it came out really mild, like Anaheim chile mild. If I use this recipe again, I’ll include some of the seeds for a little bit of heat.

      Prepared this according to the instructions, using a Meatr+ probe tracking the internal temperature and it came out gloriously succulent. Absolutely loved it!

  • Pan-seared shrimp with pistachio, cumin, and parsley

      I was looking for a recipe using Pistachios and Shrimp. This looked good. When I saw the recipe was by Elle Simone, I had to make it in tribute after her recent death. This is easy and utterly fantastic. The mix of spices is wonderful with the brightness of the citrus and the rich crunch of the pistachios and then bit of grassiness from the fresh herbs. I will definitely make it again. I used smoked paprika and I substituted lime juice for lemon juice.
