  • 5-ingredient black bean soup

      I love chipotle so I was excited to try this recipe but it was sadly bland and one note. I used home cooked beans and followed the book directions for the amount to sub for a can. I added a little cumin and garlic powder to try and add more flavor and it helped a bit but I still wouldn't repeat it. The sour cream also didn't incorporate fully leaving unappetizing blobs throughout. I recommend choosing another black bean soup recipe.

      Needed a bit of doctoring, but it's a good starting point. I used bayo beans, cooked from dried, and a combination of New Mexican chile powder and canned chipotle instead of powdered chipotle. Also added butter, mirepoix paste, roasted garlic, and black pepper. I couldn't abide dirtying the food processor for refried beans, so I used a potato masher to mash them in the pan as they cooked.

      My beans took way longer than the 30 minute cooking time the recipe stated, but end result was very tasty. The plantains on top were excellent!

      Delicious. I used half a bag of rancho Gordo flageolet beans, which were perfect for this. Followed the recipe and it was a hit!

      Yummy happy hour snack. I doubled this and roasted them on a large sheet pan. No microwave, so had to omit that step. Cooked for 40 minutes and probably could have done 50.

      Very tasty variation of a Caesar salad. I used store bought croutons so it was also pretty simple.

  • Chicken and rye dumplings

      We loved this dish. I was intrigued by this recipe as I had never had dumplings made with rye flour before. The stew is also slightly different from standard chicken and dumpling recipes as it contains mushrooms. The rye flour gives the dumplings a unique flavor that is very hearty. A high ratio of meat to stew makes this very hearty. Much of the prep can be done as earlier ingredients are being cooked, it is sort of a layering process. Instead of simmering on the stovetop, I placed the covered dish in the oven at 300 F as some other ATK stew recipes do. Came out just right and no worries about scorching the bottom of the pot. Otherwise followed recipe exactly. Will definitely make again.
