      The pork was a little dry and the vinaigrette really should be doubled, but it was enjoyable. The vegetable combo, on the other hand, was AMAZING. I'd be just as happy to make this without the pork.

  • Tiramisu

      I've had my share of tiramisu at restaurants, and this homemade version is head and shoulders above them. Comes together surprisingly quickly and easily, too (though it needs to sit in the fridge for 6+ hours after it's prepared). I lowered the amount of rum from 9 Tbs to 6.5 Tbs and thought it was plenty. Absolutely delightful flavors, aromas, and texture. Yields 12 generous portions.

      I really liked this. Easy to make, great flavor. We used toasted walnuts instead of almonds. It would've been great with the bleu cheese like in the alternate recipe to give it a nice oomph. I would make it again.

  • Cranberry-sour cream pound cake

      Used a third of the batter to make two nutcrackers with a Nordic cakelet mold. 350F for 25 min. No sticking whatsoever, and I only buttered the pan very lightly. Texture is almost pancake-like. It's not a heavy pound cake or too sweet. I liked that the cranberries didn't sink down into the nutcracker mold or mar the effect. The cakes could stand on their feet but need a little propping because they're top-heavy and soft. Might be pretty with a red glaze. Next day storage: slightly tougher and drier texture than previous day. Has developed almost an angel food cake flavor to it, strangely.

  • Easy holiday sugar cookies

      Pleasant, average vanilla cookies. Not what I'd call a "sugar cookie" personally because in my mind, those are always rolled in granulated sugar before baking. They spread a bit and tend to be a bit crumbly, so any elaborate stamping is not worthwhile. Used the easy glaze on pg 340 instead of royal icing.

  • Eggnog snickerdoodles

      Another early morning insomnia Christmas cookie bake. It's a pleasant rum and butter cookie. Matthew's review: just tastes like a standard crisp sugar cookie. Doesn't necessarily evoke eggnog for me, but a nice winter choice for a party tomorrow that's not Christmas-themed. Froze half the batch, so I'll see how those fare closer to holidays. Seems like a white chocolate half dip or icing drizzle would be better for "eggnog" theme.

  • Pat-in-the-pan buttermilk biscuits

      These were easy and had a nice fluffy texture (though a bit cake like). The middle ones rose to 3 inches high. Made the usual ATK baking adjustment for our oven, down to 425F. I'm not sure if I would call these real biscuits, but they are good in a pinch. Matthew approved.

      Made a half recipe in 3 qt Dutch oven, baked for 32 min total. Yielded only enough for 2 people. Great flavor and texture.

  • Rosemary focaccia

      Pretty simple bread with lots of bitter rosemary flavor and salt. We cubed the finished focaccia for fondu. One loaf was the right amount for two. It can be baked in an 8 inch pan in an airfryer at 400F for 9min instead of 30min in oven (though given the rise time, this is more of a not having an oven adaptation than a real time saver lol). I've tried this recipe with different herb mixes and reduced salt on the pan, too. A real winner.

      A really good, healthy, easy brunch dish in the summertime. We had seconds. I would up the salt and red pepper flakes a little. My husband really liked it with Tabasco sauce.

  • Pumpkin-chocolate chip snack cake

      This was a really easy recipe. The cake is very soft and moist with lots of pumpkin spice flavor. The spice level is well balanced with the chocolate; both flavors are about equal. It came out nicely in a 6 cup Nordic autumn loaf mold. Not as orange in color as some pumpkin bakes, but very good tasting.

  • Pumpkin spice muffins

      This recipe is a new favorite. The muffin has a good, hearty texture and the sugar topping stays slightly crunchy. It's essentially a pumpkin bread in the miniature. I liked that these came together quickly and didn't require a lot of ingredients. After 2 days at roomp temp, the muffins do get slightly drier and the topping becomes soft. However, they are still very good.

      I thought it was honestly pretty good and easy. However, my husband hated so much that I was obliged to cook a 2nd dinner. So, not a repeat recipe for us. If you like sweet notes in dinner, you'll probably like it.

  • Chicken and dumplings

      It was good, but the dumpling dough needs to be reduced to 1/2 to 1/3 of what is called for in the recipe. It took up over half the stew's volume.

  • Crunchy Parmesan-crusted pork chops with glazed winter squash

      Another win from ATK. I was concerned the schnitzel would be dry but it was flavorful with the lemon squeeze really brightening the flavor. While the other diner hated the remoulade, I absolutely loved it. It highlighted the chicken and paired well and is a great healthy approach to winter fruits and veggies. Great texture too.

  • St. Lucia buns

      Followed the recipe exactly (minus the suggestion of pearled sugar which I didn't have) and these came out very nicely. The taste isn't wildly interesting, but I think that's the way they're supposed to be. They look beautiful with a bright yellow color and taste good with jam. Bit time consuming, but great end product.

      It doesn't get easier than this. Like a cream scone with less sugar - and less shaping! It was a dream to scoop. Didn't stick at all, granted I greased the cup measure with non-stick spray. Got exactly 10 biscuits. Needed an extra few minutes in my oven.

      I have now made all 4 batches of cookies that come from the base mix recipe. Each time I tried and failed to pull them out of the oven before they got crunchy. Last batch I subbed veg. shortening for the butter. Bingo! You can have a buttery cookie or a soft-centered cookie, but not both.
