  • Farfalle with golden raisins and caramelized shallots

      Thought this was really tasty (& quick). I did add some feta that needed a job, so that may have contributed positively to my rating, but also sort of undid the Sicilian nature of the recipe. Still, the salty brininess of the feta played really well against the raisins. No parsley, as mine had bit the dust. Definitely a do-again.

      This was a nice pasta dish, with a bright lemony flavor. A little more garlic would be nice in my opinion as it seemed to lack a little depth of flavor. Had no fresh dill unfortunately, but used dried instead. I threw in some feta that needed using which complimented it nicely. Quick to pull together.as the veg can be prepared while the pasta is cooking.

      This is a good, basic type of pasta dish, simply & quickly made, great for those nights when there's not much energy for cooking. For my taste, I cut back on the chili powder but should have added some cumin for extra flavor. It would be easy to make for meat eaters by adding some ground beef or chorizo.

  • Pinto bean and salsa pasta toss with lime and avocado

      I was pleasantly surprised by how satisfying & easy this was to prepare. Added some corn because, why not? My salsa was mild, so hubby added some hot sauce for more of a kick. I also made some chili-seasoned ground turkey for hubby to add to his portion, and we both threw on some Mexican cheese blend (because, again, why not?!). I knew it was a success when hubby volunteered, without my prompting, how tasty it was. The avocado & dressing was supposed to be put on top of the greens & pasta, but due to not reading the directions, I just mixed it in with the pasta & it was fine--plenty of juices to coat the salad greens. A very nice quick meal served with a Tempranillo!
