  • Sauerkraut-braised ribs with smoked beer barbecue sauce

      Just ok. Definitely made for very tender ribs, but a bit of a production with the foil packets and sauerkraut and smoked beer etc and not really sure it was worth all the effort in the end. The smoked beer bbq sauce on the other hand was amaze-balls. I added a bit more liquid smoke as the Rauschbier I had wasn't very smoky. I could pretty much eat this sauce with a spoon straight from the jar! Second recipe from this book that has been kind of meh. Come on Steven, I'm losing faith!!

      Very good. It was too rainy to grill but worked fine in the oven. I did not saute the bread crumbs in butter. Just put them in a pile and and they adhered just fine to the wet rubbed ribs.
