      This is an excellent recipe. It’s simple to prepare and tastes great. I grill the salmon directly on the grill without the ‘plancha’. For the veggies, I use whatever we have on hand. Edamame and julienned radish work well. The marinade also works well on chicken.

  • Grilled onion and sour cream dip

      I didn't have a perforated grill pan, so I used foil. I would watch this more closely next time, as 3/4 of the onions were burnt to a crisp and inedible. This is a good dip, but very rich. Far too rich to serve with potato chips...maybe use as a veggie dip next time.

      Used boneless turkey thigh, trussed. Indirect over charcoal for 45 minutes to 165 degrees.

  • Spatchcocked chicken with chimichurri

      Used 2 1.25 pound, Cornish hens. Skewered them flat 25 x 30 minutes cooking time. Indirect and 3 minutes skin side down over direct.
