Notes about Recipes in this book

  • Turkey meatballs with lemony rice

    • BethNH on July 25, 2018

A very simple one pan meal that works on a weeknight. Turkey meatballs are browned and then finished in a pan with rice flavored with lemon juice and zest. The meatballs can be made the day before which would make this perfect after walking in the door after work.

    • julesamomof2 on January 24, 2020

We didn't like this much, but we decided it was mostly because we substituted whole wheat bread in the meatballs and brown rice for the white rice. The changes , which we made based on our preferences, made the meatballs heavy and the brown rice took much longer to cook which threw the whole timing off. We wouldn't make this one again.

    • Shewi128 on March 10, 2021

It was too lemony for our family. I had to really convince my kids and even my husband to eat it. Will not make again.

  • Tex-Mex chicken and rice

    • breakthroughc on May 03, 2021

This dish was really bland and boring, Not a "keeper" at our house.

  • Barbecued pork chops with succotash salad

    • jimandtammyfaye on August 27, 2022

Pork chops were simple and turned out well. The succotash salad was a nice variation of plain corn/lima beans. I thawed, then cooked my limas a bit before adding them to the salad. Really nice with fresh spinach.

  • Chipotle beef chili bowls with lime-cilantro crema

    • cynthia_lx08f9 on February 16, 2026

Really love the corn and beans simmered in a tomato sauce. ?I really love this recipe.

  • Modern beef pot pie

    • BethNH on November 18, 2020

This was shockingly easy and delicious. Beef and vegetables were started on the stove before the liquids were added and the dutch oven was put in the oven for an hour. To finish frozen peas were added and a ring of baguette slices sprinkled with parmesan. This was much better than the sum of its parts. Easy enough to make any time though it does take about 1.5 hours to cook.

  • Teriyaki stir-fried beef with green beans and shiitakes

    • BethNH on September 12, 2018

As with all ATK recipes the direction are meticulous. I had never followed such explicit directions for a stir fry before. The results were quite good - we were all very pleased. It took almost 45 minutes of hands on time from start to finish.

  • Cashew pork with snow peas, carrots, and ginger

    • cameron_9ui0sv on March 14, 2026

Proportions seem off in this recipe. Too much cornstarch makes is gelatinous.

  • Thai curry rice with cod

    • cynthia_lx08f9 on February 16, 2026

This is really delicious, but if I make it again, I will add another piece of cod as the cod to rice ratio is pretty low. Also, I used basmati rice because why not? ?

  • Pasta frittata with sausage and hot peppers

    • Shewi128 on October 06, 2023

This was a really interesting recipe. It tasted like an egg dish, so it was like, is this breakfast or dinner? I have made frittata before, but never with pasta. I increased the sausage, but I would also increase the peppers as well. It got nice and crispy on the bottom. I would make this again if I have angel hair pasta lying around.

  • Roasted salmon, broccoli, and potatoes with whole-grain mustard sauce

    • DeeinMI on August 24, 2025

Double the sauce. This was pretty good.

  • Roasted chicken with root vegetables

    • cynthia_lx08f9 on February 14, 2026

Amazing flavor. We make this all the time.

  • Lemon-herb cod fillets with crispy garlic potatoes

    • BethNH on September 12, 2018

I scaled this in half to serve two people. This was quick and easy to pull together. The potatoes were delicious - both my husband and I wished I'd made more. The fish was very good but it didn't absorb any of the lemon flavor from the lemon slices placed on top. Next time I think I'd add some lemon zest before baking. The sprigs of thyme didn't seem to add anything to the flavor - I certainly wouldn't go out of my way to buy fresh thyme for this recipe. We liked this a lot and will certainly have this again.

  • Meatloaf with sour cream and chive smashed potatoes

    • Shewi128 on June 04, 2024

I loved this as an easy one-dish hearty meal. I didn't have saltines for the meatloaf, so I used breadcrumbs instead. I also didn't use vinegar in the smashed potatoes for flavor preferences. For the easy clean-up, I'd definitely use this recipe again.

  • Baked ziti with spinach and sausage

    • tarae1204 on February 10, 2022

This Dutch oven baked pasta recipe works well as written and incorporates lots of spinach. I used turkey sausage for the meat component. I like how the cheeses are both in and on the casserole.

    • cynthia_lx08f9 on February 16, 2026

A perfect meal when you’re busy. No chopping, just dumping. ?

  • Braised chicken thighs with chard and mustard

    • mgmcewen on November 25, 2020

This turned out very slimy for us and the chicken didn’t get very tender.

  • Korean-style beef short ribs with bok choy

    • ldholakia on July 30, 2019

This is absolutely delicious - in regular rotation at our house. You can skip the bok choy part if for some reason you do not like it, but it makes for a very low-effort side dish.

  • Bucatini with peas, kale, and pancetta

    • heidi_41vf3p on March 30, 2026

This recipe was delicious and easy! Don't be shy about the lemon zest and add red pepper flakes for a kick.

  • Curried chicken with coconut rice and lime yogurt sauce

    • Shewi128 on October 11, 2022

The combination of the rice and chicken is really good. However, the cauliflower addition is NOT good unless you like practically raw cauliflower. Unless you love raw cauliflower, I'd recommend not including it. For the record, I used the make-ahead method of cooking everything the day before, and baked it for an hour the day of. One last thing: the yogurt sauce was delicious. Don't skip it.

  • Baked scallops with couscous, braised leeks, and tarragon-orange vinaigrette

    • anya_sf on February 25, 2024

I wanted to cook 1.5 cups couscous, so increased the liquid to 1.5 cups. The couscous took the full 25 minutes to cook. Unfortunately, the scallops were done after 20 minutes. The flavor of the vinaigrette really made the dish. Relatively quick and easy, I'd consider making this again, adjusting the cooking time for the scallops. The optional saffron did not add anything.

  • Cajun-style rice with andouille, shrimp, and okra

    • kelley_dsv25l on February 01, 2026

Easy, but time intensive. Could use more seasoning.

  • Mexican-style spaghetti squash casserole

    • LemonVerbena on January 07, 2025

I use Feta instead of the cotija and it's delicious. Have made this 3 or 4 times.

  • Beef taco bake

    • breakthroughc on May 03, 2021

This was a good weeknight comfort food dish. There is plenty of flavor. I liked it and hubby loved it and voted it a keeper. I use some open tortilla chips instead of the taco shells.

    • breakthroughc on May 04, 2021

I forgot to add that I could not see the reason to cook the hamburger in the microwave. I put it in a frying pan with the onion and cooked it, added the spice and tomatoes. It is done in the frying pan by the time you have the rest of the ingredients ready so why microwave it?

    • tarae1204 on February 10, 2022

My children love this recipe and we will surely make it again. It’s funny that it’s described as taking “less time than prepping tacos.” Probably not. But it’s less clean up and easier to eat than crumbly tacos. It’s also a good way to use up stale taco shells. I served it in shredded lettuce and tortilla chips, with sour cream and salsa. The step of microwaving the meat is different but I liked it - less stove splattering, and a tender bite due to less browning.

  • Hands-off spaghetti and meatballs

    • cynthia_lx08f9 on February 16, 2026

This has become a regular rotation in our family because I love spaghetti and meatballs, but hate having to make a separate dish for both. All in one pan and simply baked!?

    • Shewi128 on February 25, 2026

This is super easy and a great option for a weeknight meal. I even will make it with frozen Costco meatballs for a quicker option. It's not amazing, but it works for a lazy meal.

  • Cheesy butternut squash and Swiss chard lasagna

    • cynthia_lx08f9 on February 17, 2026

This has to be in the ten recipes ever from ATK. So, so good and unique with all those yummy fall flavors including sage.
