This cookbook features over 250 recipes that are low in fat, but full of flavour. Throughout, the book's emphasis is on fresh food cooked with a delicate blend of herbs and spices to achieve richness and flavour without, or with very little, fat. Recipes range from Chargrilled Chicken with Fresh Mango Salsa and Salmon with Almond Stuffing as main meals, to Brandied Chestnut and Mushroom Terrine or Baby Vegetable Fricassee for something lighter.
