      Cooking eggs for 15 minutes is way too long. I’d say 7 is sufficient using this method.

      This is my go-to Eggs Benedict recipe. So good! The hollandaise sauce is perfect with just the right amount of lemon juice.

      The frozen hash browns created quite a bit of water at the bottom of the pan. I also prefer less of a custardy egg mixture, so if you have similar texture aversions, I'd use less milk than called for.

      Pretty good. I made vegetarian with veggie sausage. Sauté with olive oil as the veggie sausage doesn’t release any oil.

      This is a comforting dish that doesn’t feel heavy. I subbed thinly sliced gherkins for the capers. If I make this again I’d double the mustard to punch up the flavor.

      This dessert is easy and delicious. I didn't think I liked biscuit style strawberry shortcake until I made this version. It is so quick to make, that I make it while grilling outside. By the time dinner is finished, the strawberries have had plenty of time to macerate. Great summer dessert.

      This is my go to recipe when making an apple pie. I made the apple crumb version using Jonathan apples and added the zest of half a lemon to the sugar of the pie filling. The apples were slightly tart, but the finished pie was a nice balance between sweet and tart.

      We enjoyed this lo mein recipe. You could definitely substitute tofu for shrimp/chicken, or just omit entirely. I could only find Chinese wheat noodles in the grocery store, but it was a fine substitute. Any long noodle would work.

  • Coconut chicken with pineapple-mango salsa

      I don't know that there was anything wrong with this, but it just wasn't that exciting. However, full disclosure we had a perfect storm where our mango wasn't ripe, we had a bit too much chicken on the pan so it never crisped up, and everything was kind of soggy. So definitely could be user error here.

      Good. I would prefer a bit more olive oil to vinegar, but it’s a very easy lower fat option. I did add 1/8 tsp of fine sea salt.
