      I didn't have Mexican style tomatoes on hand so used home-canned tomatoes and added cumin, cilantro and a touch of hot sauce. Needed more salt. Did well as leftovers - reheated well in the microwave the next day. Sprinkled a little cheese on it for extra protein. June 2015

      I’ll always give this one 5 stars - throw back to my childhood. Didn’t add pimientos and next time I’ll use cream of mushroom soup to get that authentic mom-made touch. Good stuff.

      I find the recipes in this book to be solid starting points for dishes. I usually have to tinker with seasoning but that’s not necessarily a bad thing. Next time I will definitely add more hot sauce and instead of cooked chicken, maybe add chicken with the rice to cook and get more flavor?
