  • Roasted tomato, garlic and bread salad

      p. 32 - Outstanding! DH has you squeeze the roasted garlic into a dish to whisk up a dressing but I found the garlic wasn’t breaking up well so I whizzed the dressing in my mini Cuisinart. I used Cobb’s sourdough bread and the wonderful crunchy, dense croutons were a highlight in this dish. I went with Kumato tomatoes (Romas are drab right now). I’d consider this salad to be a bit of a riff on a panzanella salad. I omitted the prosciutto. I couldn’t find my white balsamic so I went w my regular balsamic with no averse affect it seems. This dish is a flavour explosion, everyone was commenting that the dressing was incredible and it was a perfect match for the sweetness of the caramelized tomatoes. Honestly this is one of the best salads I’ve made in a long time. I passed parmesan at the table and it was lovely grated atop. If I could give this an 11 out of 10 I would.   • Cheat's ricotta gnocchi with sage butter

      This is not a simple dinner. The dough was so sticky that I had to use two spoons to shape the gnocchi, which took almost 20 minutes. Taste was ok, but not a hit with the children. Substituted home-made tomato sauce for sage butter.

      Made this with leftover chicken breast meat from yesterday's whole roast chicken. Very good, quick weeknight dinner, with very little effort required. Husband loved it!

      Made this quickly one afternoon - essentially an easy quick meal to prepare. Serve with Thai rice. My 3 sons loved it! Just wish there was a bit more sauce.

      easy and tasty. i’ve made it multiple times over the years and have made adjustments to suit myself. i use brown onions instead of red. i use two chorizo sausages instead of three. i add chopped red capsicum. i don’t serve with cherry tomatoes if i don’t have them but they add a lovely bright pop to your mouthfuls of delicious rice. this is fab and quick.
