      Palm sugar is pretty hard to find (or was and I tried several times) so I relented and used brown sugar mixed with a bit of raw sugar to dry out the 'palm sugar substitute' a little.

      Be initially strict with quantities or mixture won't freeze (that's more a note to self...)

  • Mint, lemon and ginger iced tea

      I tend to avoid adding ice to herbal teas as they tend get bitter notes when brewed sufficiently strong to accept the ice. Mint tea is an exception. I liked the fresh mint supplement and found the ginger to be an inspired addition. Well worth repeating for a family summer meal.

      For non-alcoholic version, use ginger ale in place of both the bourbon and soda water.

      This was really good and so easy. I think it took me about 15 minutes and plated up it looked great. I had not planned this dish so I used green beans and asparagus instead of chinese greens.
