      I am actually not qualified to review this recipe because I can only mention what not to do. Do NOT cut down on the honey (dish was very very vinegary), and do not change the vegetables (used zucchini and white cabbage instead of snow peas and gai lan, which were the only vegetables I had on hand), BUT done right I imagine this to be quite delicious.

      An lovely dish that eats well, and you can serve directly on the oven tray at the table. I usually baked feta in terracotta dishes, stuffed full of tomatoes, olives and capsicum, and love that way. I'd probably add olives if I made this again. I baked the dish longer that specified - an extra 10 mins for the first part.

      I think this recipe could do with some improving, but I love the idea, the simplicity and the Middle Eastern feel.

  • Crispy cauliflower salad with green tahini dressing

      I played around just a little with this roasted cauliflower Salad. I roasted the beans with the cauli as I love roasted beans. Also added some haloumi that needed using up along with the feta. It was served warm on a bed of freekeh. I really loved this as a winter combination. I also added pickled cumquats to the plate which really cut through the creamy dressing and added lightness. Next time I would also leave out the cucumber and make the dressing a herb-tahini-yoghurt-garlic-lemon dressing.

      I have a similar baked feta dish that I have made for years, and is a bit simpler than this one - but I do love the parmesan and thyme topping idea. So have stolen that and added to my usual recipe approach.

  • Celeriac and fennel soup with hazelnuts and tarragon

      Not bad, excellent on these freezing nights we've been having. Fennel and celeriac are two of my winter favourites. I omitted the nuts, and used my dried mixed herbs (from the Summer garden) in place of tarragon as that does not grow in Winter here. For protein I added some split mung dal which just disintegrates into the soup and provides a beautiful base. Yum.

  • Pumpkin tofu burgers with herb mayonnaise

      Surprisingly delicious! Lots of veg used, lots of protein too so a great recipe for vegetarians. Tasty. The burgers were good and mostly held together. The recipe made quite a bit. Very filling.

  • Fig, walnut and honey loaf

      I usually make bread by hand, but with this recipe it is difficult to incorporate the fruit and nuts by hand. The resulting bread was nice, but not a favourite. 7 cups of flour makes so much dough that I divided it in half to make 2 loaves. One was baked at the time, and the remainder kept in the fridge and baked the next day.

  • Upside-down summer Pavlova

      This is a stunning recipe - such a simple idea but so effective. Much easier to serve than a traditional pavlova. I've made it three times using different fruit combinations and it was a hit each time.
