  • Rustic simmered chicken

      p. 84 - This delicious one-pan meal is a creamy chicken stew with lots of flavour despite a fairly quick cooking process. That said, the dish did take longer than the instructions in the recipe suggest so I would suggest allowing an hour to prepare this dish from start to finish. The only changes I made were: I used a sauté/simmer pan because I felt the extra depth would hasten the cooking time of the potatoes in this dish. I didn’t have tarragon so I used some fennel fronds to impart a subtle anise flavour in this dish and I didn’t have white button mushrooms so I quartered some cremini and cubed some king oyster mushrooms to approximate their size. We really enjoyed this dish. The leeks added a lovely sweetness to the sauce and the mushrooms provided a nice textural element and added to the earthy flavours of the dish. The cream was a nice touch. Really yummy and worth repeating. Photos here:

      Agree with Breadcrumbs re the time. I used other vegetables and evaporated skim milk instead of cream - was great.

  • Instant hummus

      p. 162 First use of this recipe and of course, Donna didn’t disappoint; her Instant Hummus was a huge hit. Quick, delicious and a little different from other versions I’ve made over time. This doesn’t include cumin but is topped w sumac. I was serving it to start a Middle-Eastern inspired menu so the sumac-topped version seemed perfectly appropriate. We loved this, very tasty and the nutty richness of the tahini really seemed to shine through. I’d definitely make this again! Photos here:

      This recipe produced a juicy, lemony chicken breast, which the kids liked a lot. The feta cheese added an interesting touch as well. Served with oven-roasted broccoli.

      Yummy, but so close to the Donna Hay haloumi and chicken which is slightly better.

  • Melted mozzarella chicken

      Great idea of a recipe, but the chicken breasts ended up too tough. The oven time indicated in the recipe was probably too long for my small chicken parts. Will try again since the pancetta and mozzarella covered breast parts were great. Served with simple potato mash.

  • Mint & rosemary lamb meatballs

      Not as quick as I wanted it to be for a weeknight meal, but nice change to the usual meatball routine. Loved the addition of feta instead of breadcrumbs. This as well as the mint and rosemary added a nice Greek touch to the dish. Served over whole wheat fusilli pasta.

      Added some cauliflower (didn't have enough broccoli), worked just as well as if only using broccoli.

      I chose this recipe because I wanted to get rid of some rice noodles that were lingering in my pantry and it turned out SO GOOD that I will have to go and buy a new pack soon... It’s quick and easy too, so definitely five stars! I used salmon fillets and added a little lime juice and maple syrup (my go-to substitute for palm sugar) to the scallion mix because I love that salty/sour/sweet combo.

      I was skeptical about combining hummus and tuna but I had all the ingredients on hand and decided to give it a try. It was fresh tasting and absolutely delicious!

  • Spinach with sesame miso dressing

      I loved this, though I admit I made some adjustments because I did not have the exact ingredients on hand: subbed red miso for white, very finely cut leek instead of spring onions, and finally olive oil instead of sesame oil. I bought sesame oil once, and when I saw how fast it goes rancid, I knew it was not compatible with my very infrequent use of it. The resulting sauce was great, sweet and tangy and salty. Would add some acid like lime juice maybe.
