    “No Fuss choc chunk cookies” I’m now addicted to these! I keep them in the fridge in a glasslock container and one is the perfect sweet treat. Highly recommend.

    Pg 194 “ No fuss choc chunk cookies” These are really good… quick to throw together and delicious. I had to make my own cashew butter as I was out but it didn’t seem to affect the recipe. These are meant to make 8 cookies but I got 12 and that was using a 2 tab sized cookie scoop. It didn’t say to do this but when I removed from the oven I lightly pressed them down as they didn’t flatten at all. No way you can kid yourself these are healthy with that much sugar (unrefined or not) but one cookie was more than enough to satisfy any sugar cravings and I like knowing that they are more nutritious overall. Added into the rotation.

    Not much of a recipe but “Caramel yoghurt” was okay. Literally sprinkle a tab coconut sugar over yoghurt. I found it changed the texture of the yoghurt and while nice enough I wouldn’t repeat. Prefer a different technique I’ve tried where you melt a few tsp of biscoff spread and then stir through the yoghurt. Less sugar and much nicer imo

      Good. The meatballs are ever mild with a gentle tarragon flavor. I love tarragon so I enjoyed the leek tarragon sauce. Make sure the sauce is the thickness you want before putting in the oven- it didn’t seem to thicken much in the over. The peppered spaghetti makes it richer, regular spaghetti is lighter.

      Good weeknight meal. Pulls together easily. The dressing is nice. I did add grated ginger to the dressing since I didn’t have the pickled ginger. Made gluten free with buckwheat noodles.

      A very moist coconut-y banana bread like cake. Nothing to repeat but fit the bill perfectly when I needed a quick snacking cake to bring to the office.

      Very nice. Similar to a semifreddo. Took about 3 lemons. The cheese mixture was thin so it was better to gradually add the cheese mixture to the whipped cream. Nice light and refreshing for summer.

      Delicious….measure the mint next time. Try to make after 4 hours in the freezer. Hard to do when frozen over nite.
