      this was easy to make a bit ahead although it doesn't need long time cooking. I served it with Israeli couscous salad. yummo!

      This is one of those 'near-kitchen-sink' recipes - I didn't have aged cheddar cheese at hand so just used strong, grated tasty cheese (I know, it's cheating :D. As previous member notes, great cold/at room temp. too! This dish got me through many poor uni student weeks and months.

      Could never find saffron (thank you Indian/Middle Eastern grocers!) or dried porcini mushrooms when I tried to make this which is probably why I could never successfully prepare though both of which are much easier to locate (I don't recommend trying to substitute the porcini with another variety of dried mushrooms).

      I could never find leeks whenever I made or attempted this dish so just often just omitted them.

      Personal preference - never used watermelons or whole red chilli. Generally used chilli paste due as cutting chilli would burn the cuts in my hands for days (from playing stringed instruments).

      We found this unbalanced & didn’t enjoy it much at all. The combination of lemongrass, lime juice & tamarind was quite overpowering.

  • Hokkien noodles with seared scallops

      16/05/16 for Helen and Murray. Very good. Next time I would use 350gms for two. Chilli oil on scalloped is perfect
