  • Coconut-ginger rice

      Nice and fragrant. I would probably double the ginger and coconut milk next time. And consider some green onions. I found the rice stuck to the bottom and in want of more liquid, though I did simmer for 20 minutes and let steam for 5 off heat. (And my stovetop is woefully inadequate at a simmer unless you are trying to simmer magma.)

      Good flavor for low fat. The peas take way longer than 20 minutes (at least an hour).
