      I used the two-minute mayo from Serious Eats as the base, so omitted the yogurt, used my home-canned chipotle ketchup instead of the chile sauce, also used home-canned sweet pickle relish. Much better than store-bought dressing.

  • Fresh tomato sauce

      Decent quick sauce for a weeknight. No Spanish onion, so used vidalia, also added a splash of white wine.

      This is okay. I like broccoli, and I want them in large pieces, don't really like them all chopped up. I also would like it a bit cheesier but then it wouldn't be light anymore.

  • Turkey-tortilla casserole

      Nothing special and I used chicken instead of turkey. Just needed a recipe to use up my corn tortilla without having to shop for other ingredients.

  • Blueberry-yogurt muffins

      Lite (only 2 T oil for 12 muffins and I use non-fat yogurt), tender and not too sweet. I usually sub lemon juice for the orange juice and add lemon zest or orange zest if using orange juice.

      I always use fresh blueberries for this. My go-to for blueberry cake.

  • Onion-topped pot roast

      It felt like March even in June here, so it was pot roast time. The onion topping did give the roast a lot of flavor, the only complain I have with the recipe was that the gravy was too thin, the braising liquid was not reduced nor thickened. The onion and garlic were pureed and spread on top of the browned roast, then baked uncovered for an hour forming a crust on the roast. Red wine, beef broth and tomato juice (I just mix a tablespoon of tomato paste with some water) were then added and baked covered for 2.5 hrs. Water, carrots and potatoes were then added and baked for an additional hour, the beef was real tender by then.

  • Sunday baked ham

      Definitely less sweet than my normal ham glaze, did need several coatings to look like a glaze, so not as moist as other glazes, but the end result was not bad at all.

  • Tart lemon curd

      This turned out very tart--probably too tart!
