Oisin Davis is a self-confessed wizened old warhorse of the Irish drinks industry. His earliest work years saw him battling in the trenches of hospitality, taking on roles as varied as a dive bar doorman in San Francisco to a music promoter for clubs and venues. In 1999, he opened The Sugar Club on Dublin’s Leeson Street and worked as their general manager for 13 years. Staffing shortages there forced him to learn the craft of cocktail bartending and he quickly grew to enjoy it.

His love for Irish spirits and cocktails led him to establish Ireland’s first dedicated drinks consultancy, Great Irish Beverages. Through this company, he has run nationwide drinks festivals and has worked all over the world educating and marketing for Jameson’s global team. He also manages publicity for some of Ireland’s most prestigious spirits and iconic whiskeys. Oisin has an award-winning monthly column in Food & Wine Magazine with the Business Post and is a regular radio and TV contributor.

In his debut book, Irish Kitchen Cocktails, he shows us how easy it is to make cocktails with Irish spirits using everyday kitchen equipment. Ireland is home to some of the best distilleries on the planet, and it’s no longer just whiskey. Ireland is also creating incredible Irish gins, poitins, vodkas, rums, liqueurs, meads, vermouths and fruit distillates.

Understanding the basics of cocktails will allow you to explore these Irish spirits in delicious and easy ways. Do you have a spoon and a large bowl? You can stir up the perfect punch for any kind of party, like Mrs. Doyle’s Iced Tea. Remember that NutriBullet you bought because you wanted to go on a smoothie diet? Dust it off and you can rock out a whole heap of frozen cocktails, like a Frozen Jameson, Ginger Ale & Lime. Got a decent-sized jug and a hand blender? You can lash together amazing cocktails in minutes, including a Wicklow Wanderer. Found yourself in a cocktail emergency? Be prepared with drinks such as The Ginger Divil. Slainte!

White negroni
Makes 11 x 90ml serves

If you’re out on the sesh with a load of people from Donegal, then for the love of God, don’t try to keep up with them if a bottle of poitín is produced. It will not end well for you. The ‘Forgotten County’ is widely recognised as being the poitín capital of Ireland and their people are well able for it. But thanks to the good folks in Sliabh Liag Distillery in Ardara, Donegal is now known for making some rather delectable whiskey, vodka and gin. Their An Dúlamán Irish Maritime Gin is distilled with wild Donegal seaweeds and works magically in a white negroni.

  • 300ml An Dúlamán Irish Maritime Gin
  • 300ml Lillet Blanc
  • 300ml Suze
  • 100ml water
  • ice cubes
  • orange wedges, to garnish

Pour the gin, Lillet, Suze and water into a large jug, then stir for 30 seconds. Pour into a clean 1-litre swing-top bottle. Label it with the name and date and stick it in your fridge door to chill.

For each serve, shake the bottle, then pour 90ml into an iced tumbler and stir with a teaspoon for 10 seconds. Drop in an orange wedge to garnish.

This will keep for six months, unopened, in your fridge. After you open it, you will still get another month out of it.

    Favorite is usually a Hendricks gin & tonic with cucumber. My uncle often has the limited run flavored Hendricks which usually get a small amount of lime or lemon depending on the flavor. Delicious!
