Notes about Recipes in this book

  • Baked tomato and eggplant salad

    • Ganga108 on June 01, 2023

An lovely dish that eats well, and you can serve directly on the oven tray at the table. I usually baked feta in terracotta dishes, stuffed full of tomatoes, olives and capsicum, and love that way. I'd probably add olives if I made this again. I baked the dish longer that specified - an extra 10 mins for the first part.

    • Ganga108 on June 17, 2025

Making again with some substitutions. Added chickpeas and my preserved lemons to the bake, used tofu for feta, omitted bread, added nuts at the end. Delish.

  • Roasted pumpkin and chorizo salad with crispy chickpeas and feta

    • Ganga108 on June 21, 2025

Another recipe from this book that I am adapting to my dietary restrictions. Firm tofu cubes for feta, no chorizo, and some home made products for the vinegar (home made grape vinegar), lemon (preserved lemons in the bake), and honey (pomegranate and quince winter honey). Tossed in some of my Hawaiian chilli water and chilli paste for the heat. Yum! I adore anything with roasted chickpeas in it. Topped the bake with some green ferments.

  • Turmeric carrot falafel with minted yoghurt

    • Ganga108 on February 28, 2022

I think this recipe could do with some improving, but I love the idea, the simplicity and the Middle Eastern feel.

  • Chicken, chorizo and potato tray bake

    • angrygreycat on March 06, 2022

    • Ana10000 on March 11, 2024

I always have to make double this recipe - one portion is simply not enough as everyone loves it so much.

  • Charred broccoli studio salad

    • Ganga108 on July 01, 2025

I turned this into a tray bake meal rather than a salad, with a few substitutions. It was fabulous. I sub'd one of my chilli pastes, brined capers and preserved lemon, and added a splash of my vinegar. Half way through I added some cooked chickpeas and some marinated tofu wedges (instead of feta). A sprinkling of nutritional yeast at the end. Delicious.

  • Crispy cauliflower salad with green tahini dressing

    • Ganga108 on May 11, 2022

I played around just a little with this roasted cauliflower Salad. I roasted the beans with the cauli as I love roasted beans. Also added some haloumi that needed using up along with the feta. It was served warm on a bed of freekeh. I really loved this as a winter combination. I also added pickled cumquats to the plate which really cut through the creamy dressing and added lightness. Next time I would also leave out the cucumber and make the dressing a herb-tahini-yoghurt-garlic-lemon dressing.

  • Spiced meatballs in sticky chilli sauce

    • debkellie on April 21, 2023

Very easy. Very tasty. And "light". Served with a cucumber, mint and coriander salad as I am not a fan of kimchi (her suggested accompaniment). This is not really a "rice dish".... Full recipe at https://www.donnahay.com.au/recipes/dinner/spiced-meatballs-in-sticky-chilli-sauce

    • angrygreycat on June 13, 2025

Kids loved the sauce. Very quick and easy meal served it with rice, kimchi, cucumber and peppers as suggested.

  • Pan-baked tomato and Parmesan feta

    • Ganga108 on April 14, 2023

I have a similar baked feta dish that I have made for years, and is a bit simpler than this one - but I do love the parmesan and thyme topping idea. So have stolen that and added to my usual recipe approach.

  • Honey soy tofu with udon noodles

    • Astrid5555 on October 01, 2022

I am actually not qualified to review this recipe because I can only mention what not to do. Do NOT cut down on the honey (dish was very very vinegary), and do not change the vegetables (used zucchini and white cabbage instead of snow peas and gai lan, which were the only vegetables I had on hand), BUT done right I imagine this to be quite delicious.

  • Pumpkin tofu burgers with herb mayonnaise

    • Ganga108 on September 23, 2023

Surprisingly delicious! Lots of veg used, lots of protein too so a great recipe for vegetarians. Tasty. The burgers were good and mostly held together. The recipe made quite a bit. Very filling.

  • Upside-down summer Pavlova

    • Ana10000 on September 01, 2022

This is a stunning recipe - such a simple idea but so effective. Much easier to serve than a traditional pavlova. I've made it three times using different fruit combinations and it was a hit each time.

  • Celeriac and fennel soup with hazelnuts and tarragon

    • Ganga108 on July 19, 2023

Not bad, excellent on these freezing nights we've been having. Fennel and celeriac are two of my winter favourites. I omitted the nuts, and used my dried mixed herbs (from the Summer garden) in place of tarragon as that does not grow in Winter here. For protein I added some split mung dal which just disintegrates into the soup and provides a beautiful base. Yum.

  • Silky miso pasta

    • Astrid5555 on November 17, 2024

Needed some additonal heat via the addition of crunchy chili oil, otherwise quite ok.

  • Lucky pot ginger chicken

  • Fig, walnut and honey loaf

    • Ganga108 on July 11, 2022

I usually make bread by hand, but with this recipe it is difficult to incorporate the fruit and nuts by hand. The resulting bread was nice, but not a favourite. 7 cups of flour makes so much dough that I divided it in half to make 2 loaves. One was baked at the time, and the remainder kept in the fridge and baked the next day.
