      Great no-meat dinner! The eggplant treatment really makes this a quicker meal than when normally dealing with eggplant. Rich and satisfying sauce.

      This comes from the Cooking for 2 book, but for us it feeds 3. Very yummy, the cinnamon and nutmeg offer a different taste profile that is delicious! Also, this is a Greek dish, not Italian.

      While it's not the most amazing beef enchilada casserole (then again what is?), it's pretty derned good. I made it while recovering from a bout of illness, and it went together easily. There was enough for three servings, which is good when you live alone but don't want to eat the same thing all week long.
