  • Blueberry streusel muffins

      Followed recipe as written. Muffins came out perfectly. Strudel makes a little more than needed, otherwise 12 nice size muffins result. Baked for full 27 minutes. Rested for 20 minutes in muffin tin and easily removed. Nice way to use up that last 1/2 cup of buttermilk. These freeze very well.

  • Tropical carrot cake

      Substituted frozen mango and mango juice concentrate. The tropical taste is the main draw and it pairs particularly well with the cream cheese frosting. The cake is very moist and dense.       Love, love, love this recipe. The flavors are amazing. It takes some pre-planning, but is great for make-ahead meals that will WOW your guests. I doubled the sauce. In addition, I purchased two whole racks and trimmed to accommodate the recipe. So much cheaper and the leftover bits worked well in another meal. You really should try this recipe.

  • Smoky scalloped potatoes

      I like the fact that potato slices are cooked stovetop first before baking. Had expired buttermilk that needed to be used up and this added very nice tang to the sauce. I did not have smoked Gouda but used smoked Paprika with combo cheddar and Monterey Jack cheeses. Very flavorful and quick version of scalloped potatoes.
