  • Coffee-spiced pork shoulder with sweet potato and yuca

      Complex and tasty sauce results from this interesting combination of ingredients. And pork butt/shoulder is always good. However: recipe suggests "about 2 hours" to cook the pork. You need more time, 3 to 3-1/2 hours at least to get to pull-apart tender. Recipe also says to put the sweet potato and yuca in when you add the pork to the sauce to cook. ?!?. The sweet potato, even cut bigger than the 1" pieces directed, would utterly disappear. It would make the sauce thicker, but I don't believe that was the intention because he says to take the meat and "veggies" out at the end before reducing the sauce. Sweet potatoes were way too soft after just 25 minutes, when I scooped them out and set aside to be added at the very end. I did not have yuca, but 20 minutes or so before dish was done, I added one Yukon gold potato cut into 1-1/2" pieces. Except for those changes to time/yuca, and using light rum instead of dark (what I had), I made as directed. Would make again.
