      This recipe involved A LOT of chopping, but once that's done it's very easy to put together. A nice stir fry that's low carb. I didn't miss the rice that usually accompanies stir fry dishes. This didn't keep well, I tried some left overs the next day and they weren't great.

      An easy dinner. I used the food processor to shred the Brussels sprouts and carrot to save time (and my knuckles). The picture in the book has definitely been styled since the carrots and Brussels look raw and the instructions have you brown them. Overall this was a healthy, quick dinner. I would make it again.

      I had to use beef instead of chicken, and I thought this was really tasty. I used a food processor to shred the brussels sprouts and carrots would definitely shred the pepper as well. Next time ?I would double the sauce. Adding an egg on top is a smart choice!

      Tasted good, but even using a food processor to speed up chopping, this felt like too much effort for the result. I would not recommend doubling the recipe—the quantity becomes pretty unwieldy. I served this with homemade mandarin pancakes and it reheated well.

      Another great chicken recipe from this book. Turkey bacon, a recommended substitute, worked really well in keeping the chicken moist. We used only about half the BBQ sauce and (store-bought) ranch dressing and it was plenty for us.

      This is described as a gratin but my family thought it was a different take on Shepherd's pie, one everyone really enjoyed. The turkey filling was moist and flavourful and the potatoes, especially the ones on the very top, were golden and crispy and delicious. I made this dairy free, omitting the cheese and replacing the milk with stock. I brushed the potatoes with a little olive oil before broiling.

      This felt like a cross between shepherds pie and chicken pot pie. It was good and I will probably make again. I only used 1 lb of turkey and 3 potatoes but the same amount of liquids. 2 pounds of turkey seems excessive. the flavors are subtle not bold, but overall it’s a good dish.

      This had great flavour and was very easy to put together. I did stray from the instructions by cooking the spinach mixture in a separate pan. I also only seared the chops at the start, letting them cook through once they were added back to the mushrooms. My husband not only ate the spinach but enjoyed it so this will definitely be made again.

      Not wanting a lot of leftover yolks, I calculated the volume of egg needed (1/2 recipe = 180 mL) & used 2 XL eggs, 1 L egg + 1 XL egg white, calling it close enough. A jalapeno freezer raid resulted in a combo of diced, roasted + roasted jala pesto. For the top, I seeded/sliced a large serrano. End result was a really good "eggs for dinner" dish that we ate with a homemade chipotle/tomato relish & I will make this again.

      I deviated quite a bit but liked how it turned out so documenting it - used ground turkey instead of beef (beef would also be excellent), served over white rice instead of riced carrots. Quick pickled some shredded carrots & cucumber. Used kale instead of spinach (spinach would probably be better). Still delicious! Consider starting with half the soy sauce and seasoning to taste, was a bit salty.

      This was good for a weeknight 'lazy' lasagna, although I'm not sure how 'skinny' the recipe is, given the generous amount of cheese. I adjusted the recipe to reduce waste- a whole pepper instead of the amount called for, an 8 oz box of noodles versus 6 oz called for (good recipes should take this into account, imo). I also don't love no-boil noodles (they turned out a little gummy for me) although you can't beat the convenience. Leftovers reheated well for lunch the next day.

I served the burgers (broken up) over buttered, grilled ciabatta (& then cubed for easier eating with a fork) and made more onions than called for. It's hard to express why we didn't love it, but I am unlikely to repeat this one.

      So easy, so tasty! This recipe was remarkably flavorful and interesting, despite such simple ingredients and easy prep. The only change I made was to use boneless, skinless thighs, which worked great for us. The combination of Brussels and butternut was really good, and the sauce was perfect. I’ll make this again for sure.

      Really delicious! The sauce is tangy rather than sweet and gives the chicken a burnished look - no one even noticed it was skinless. You don't want to skip the direction to line the baking sheet with parchment/foil as the sauce burns easily (kitchen was quite smokey) and you might want to give the vegetables a toss half way through cooking for the same reason. I doubled the vegetables.

      A decent weekday dinner, nothing special but nice for a healthy everyday dish. I used sweet potatoes instead of butternut squash because that's what I had on hand and it was good. My only complaint was my sauce was a little thin, and I didn't achieve the look of the picture, and actually wasn't as flavorful as I had hoped. Perhaps a run under the broiler would help.

      Chicken was very good and the sauce is delicious but, like most tray-bakes, by the time the chicken is cooked enough the Brussels and butternut are way overdone. Just cook them separately.

      I had large chicken breasts so I diced and cooked them and glaze stove top. Roasted the vegetables per the recipe. Tasty and very easy glaze. I’m sure the roasted chicken thighs would have been tastier. Serving was a little on the small side. I don’t love it as leftovers.

      Makes a thin pasta sauce, but I like my sauce that way. I used ground beef, browned the meat and removed from the pan and drained. Then I sauteed the onion and garlic in some olive oil. Very easy dish!

      I did the drumettes and flats that I bought already cut apart. This recipe is from the air fryer section. My air fryer is small so it would have taken several rounds to get them all fried, so I opted for the oven version of this recipe. I made the marinade early in the day and left in fridge about around 8 hours. It was a hit with son, daughter, son-in-law and myself. Hubby doesn't eat chicken so I made him something else.

      I used the suggested option of boneless skinless chicken thighs, air frying at 400 for 12-13 minutes. I held back some of the marinade to brush over the finished chicken (rather than the make the other little sauce she suggests). I also didn't have applesauce & so added Peach sriracha jam from the canning cupboard, holding back a bit of the gochujang to taste re: heat from the jam. These were delicious & are a repeat for sure.

      This was a fun and tasty way to enjoy sausages and peppers. The dough was a little finicky and tore in a few places while I was trying to shape the calzones but my patches held and there was minimal leakage. I followed the instructions for oven-baking.

      Delicious. Had a little problems with the dough but I'm not great at rolling and folding. Some of them didn't look great but didn't deter the taste. Son said best dough and calzones he'd ever had. We used mozzarella, Italian Chicken Sausages and marinara sauce (for dipping) from Aldi's. Made them in the air fryer.

There was a little too much ketchup for us though I used only half and I personally prefer my onions to be less conspicuous (I generally cook them first for recipes like this). The meat and carrots were nicely cooked in the allotted time but the green beans, which must have been on the thin side, were done 7 minutes sooner.

      No air-fryer here so I oven roasted the chicken. I think this is the crispiest oven "fried" chicken I've ever made. I marinated it overnight and the flavours came through.       This book is why we finally researched and bought an air fryer! This recipe resulted in juicy bites of chicken surrounded by the flavourful crunch we wanted. Frank's Redhot beaten into the egg gave them a lovely hit of heat and they were delicious with a simple blue cheese dip and a side of coleslaw. A definite repeat.

      The method worked perfectly (I oven-roasted them) resulting in a crisp coating and cauliflower that was tender and held its shape. The flavour was fairly neutral and went well with just lemon juice but I would have liked a bit more oomph. I think it would be delicious with the buffalo chicken nuggets coating. I used the recommended amount (and number of pieces) of cauliflower but needed only 2 eggs.

      Excellent! We used tile fish and that took a little longer to cook. Had to remove some cauliflower from the sheet pan before the fish was done. I used a 10 ounce bag of frozen cauliflower rice. Frozen worked fine, but we really wanted more. Do at least 16 ounces next time.

      I served this for dinner tonight with some leftover lemon peppper broccoli and it was a huge hit in my house! Instead of sea bass I used Kirkland mahi mahi defrosted and I also used frozen defrosted cauliflower rice. The dish was so flavorful and I love how when you roast the fish on top of the cauliflower rice all the juices get on it and it tastes so good! I would definitely make again especially on a busy weeknight. :)

      This had great flavour and the timing worked well, though I forgot to add the beans to the potatoes at the start so they went into the oven 15 minutes later. I had 2 tenderloins, 600g each, and used 750g potatoes and 500g beans so I increased the seasoning accordingly and divided the ingredients over 2 baking sheets. Roasting time was 50 minutes, 20 for the pork.

      This was a good version of pork tenderloin made this time with broccoli florets (added for the last 15 minutes or so) in place green beans. The tenderloin was cooked in the time frame given and the potatoes & broccoli were delicious - garlic, lemon, rosemary & Dijon are a classic combo for a reason! This is certainly worth a repeat.

I used Rancho Gordo mantequilla beans in place of pinto beans and they were delicious with a very nice creamy texture.       I've made lots of "all day" Bolognese sauces that are delicious but this quick version was also really good. I used a mix of grd beef + mild Italian sausage and Ali Slagel's "good sauce from so-so tomatoes" which is a GREAT oven roasted tomato sauce to keep on hand. I used the stove top method (given as an alternative to the pressure cooker), skipped the final dollops of ricotta this time & we both loved this rich, saucy bowl.

      Delicious! It was well-spiced without being hot, everything was nicely cooked and it made excellent use of pantry items. There was a little too much liquid in the beans for me but it took just a few minutes using the saute function to reduce it. I skipped the avocado and served it with tomatoes, cucumbers and lots of fresh coriander.

      We love fish cakes in this house and this recipe did not disappoint. I don't own an air fryer so I followed the alternate instructions for baking them in the oven. The only problem I had (totally my fault) was the cod released a lot of water when I baked the fillets and I did not drain them well enough. So my cakes were very wet and there was no way they were going to hold together for dredging in an egg wash and breadcrumbs. I decided to just sprinkle some breadcrumbs on top of the cakes to get that crunch and skipped flipping them over half way through baking. I also did not have seasoned breadcrumbs in the house so I used whole wheat panko and found a recipe on the Genius Kitchen website for making your own seasoned breadcrumbs. I think this recipe would also be delicious and (very) budget friendly made with canned salmon or frozen pollock fillets.

      These were very tasty but I was really impressed by the texture which was more like a crab cake with identifiable chunks of cooked fish. It was a great way to elevate the frozen haddock fillets I used. I served them with the summer succotash from the book.

I used one red bell pepper instead of two but my pepper was huge, red potatoes instead of russet, and Italian seasoning instead of rosemary. Husband and son hate rosemary. I then followed all the other ingredients and instructions.

      I only did a fourth recipe of the fish and a half on the dipping sauce. Son doesn't like salmon and hubby's still not eating very good and did feel like fish. Son ate some beer battered fish fillets with some of the dipping sauce. I did the salmon in the air fryer. I wasn't sure about salmon as a fish stick but it was really good. I was out of dill but everything was still good but bet it would have been even better with the addition of dill.

      This was so quick and easy in the Instant Pot. I used some of the wild caught frozen salmon I got at Aldi recently. I used whole tiny frozen green beans from Aldi as well and put them both in the IP frozen along with the eggs. I added one minute of cooking time for the beans and salmon and it was perfect. This was a delicious lunch. I did only eat one boiled egg on my salad instead of two.

      The ginger-lime dressing was flavourful but also very sharp; it was delicious with the chicken and carrots but we didn't care for it as much on the broccoli. I used bone-in chicken pieces which I roasted for 15 minutes before adding the carrots to the pan. I followed the recipe timing from there.

      Delicious! I made with gluten free pasta and used a spray of olive oil in place of the whipped butter. I made it with Story Farms hot italian chicken sausage and cooked the meat, shallots, and garlic in a separate pan, so everything was done at the same time. I'll make this dish again.

My husband did think it needed more kielbasa to be considered a main and I thought that with less meat, it would make a good side dish. I added extra vinegar to taste.

      Used orzo in place of the acini di pepe pasta. This was a good, if somewhat boring, soup. I think it would benefit from some added herbs/spices or something...just a little bland for my tastes. I used a can of crushed tomatoes instead of the specified diced tomatoes and I think it would be better with diced. The crushed tomatoes gave the soup a tomato sauce like texture.

      I used a whole turkey breast. This is pretty easy and timing was good. Lots of good, peppery gravy. My only problem - I had a hard time fishing the sweet potatoes out without them disintegrating. It was easy to put together, the turkey was good. But the sweet potatoes kind of got lost and tasted like the gravy more than sweet potatoes. I don't think I'd repeat. The turkey breast & gravy was good in IP. But I'd cook potatoes & green beans separately.

      Made these for dinner tonight and they are bomb!!! So good and not a whole lot of work which is perfect for a weeknight. Love that everything cooks on one pan. We just had them with cilantro cheese and Valentina on top with no guacamole and recipe is only 355 calories for two fajitas. Will definitely make again!

      This note is really about the marinade as I didn't bother with a sheet pan, just using a skillet. It was tasty & a great use for some pineapple juice in my freezer. I ran the marinade through a small blender putting 1/2 with the chicken (about a 2 hour marinade) & saved the other 1/2 to add at the end. I cooked the veg 1st (using a mix of sweet & hot peppers of every colour EXCEPT green) then removed them, cooked the chicken and then put the veg + remaining marinade back in for a quick heat up & a blast under the broiler. We like things hot so a hot chili powder, fresh hot garden chiles + a hot salsa & pickled jalapenos at the end made for some pretty good fajitas :)

      This was delicious! I used approx. half of a large can of Italian plum tomatoes and added just enough stock to bring the liquid to 750ml/3 cups so my version was a little more tomatoey. To compensate for the missing chiles, I included a minced jalapeno with the vegetables. I also added some steamed broccoli at the end. The pasta and chicken were perfectly cooked and family really enjoyed it so it will be repeated.

      Used lean ground beef. Easy morning prep if you slightly plan ahead. House smelled great. Used a medium salsa and it didn’t get too spicy. Cooked corn tortillas under the broiler for 3 minutes flipping halfway. Guac came out perfect even though only used 4 chopped grape tomatoes (so also halved the lime juice). What an easy Taco Tuesday!

      As Zosia said...a good if a bit basic soup that we did enjoy for dinner. I made a 1/2 recipe with pork in place of turkey, a pint jar of "Rotel" seasoned tomatoes & fine egg noodles added near the end. I added some pesto along with the other herbs & as a finishing touch, I added some candied jalapeno brine...thanks to Not Your Mama's canning book, I can the extra brine alone after filling the main jars & keep as a "secret ingredient" to add a lovely tart/sweet/heat vibe to things. This soup (which I think kids would love as written :) is an idea worth revisiting.

The vegetables were very nicely cooked but the turkey was a little chewy, but I suppose that's to be expected with extra-lean. I also used 454g/1 lb turkey.

      Simply flavoured comfort food. I'd never had this type of patty with cabbage in it and I think it prevented the lean meat mixture from drying out. I used green cabbage that I thought wouldn't soften much during the short baking time so I sauteed it first until it wilted. There was still a little crunch to it in the patties but it wasn't tough. Family enjoyed the meal.

      The fish was a little too sweet for me but the vegetables were delicious. I used frozen cod fillets so they may have been too lean for the level of sweetness in the recipe. Knowing the amount of liquid the cod exudes, I cooked the bok choy etc on a separate pan - good thing I did as it needed less time under the broiler than the fish.

      I was told this was "the best fish you've ever made" and I enjoyed it too! I'm not a huge fish fan, but I would definitely make this again. I need to figure out my broiler though (or leave it there longer) because the parts that DID get brown were the tastiest. I was just afraid to overcook it so took it out at the suggested time.

      What a great use for 2 boneless chicken breasts! I used the spinach & sharp cheddar as instructed and added a seeded & chopped plum tomato. I am always a bit suspicious of using raw bacon in this kind of application...so I did chop & cook my bacon just short of crisp before mixing it into the filling. The result was 2 delicious chicken breasts with lots of filling thanks to the hasselback method of filling. A definite repeat.

      I was prepared to make my usual gold std yeast dough for these but took a risk & made her Greek yogurt dough (posted separately). Sadly, this is a rare Skinnytaste miss for us. Besides my problems with the dough (arrrgghh - patience was GONE), the end result just didn't have enough flavour for us. The 1 tsp of pesto is clearly not enough for great impact & I even mixed in a more assertive cheese with the mozza as I began to suspect what the result would be. I did misread the order as I put the baby spinach leaves on last - this turned out to be a good mistake as I'm sure they helped stop the melting cheese from leaking out through the many tears. We brainstormed needed add-ins (parmesan?? bacon crumbles?? sun dried tomatoes??) as we dipped our pieces into the last of the ranch dressing we were using on our side salads.

      Our chicken came out dry but was actually perfect after the first cook. I would recommend undercooking the chicken and then have it finish cooking in the Stromboli. I also think it could have used more cheese and spinach and a dipping sauce. But overall quite good!

This book has me making my own Italian bread crumbs (in addition to the plain ones I always make) from the bag of bread ends saved in freezer and they worked well here (& for my recent chicken nuggets). I wondered about 3 jalapeños because mine seemed huge and once I had a "mountain of diced pepper" I stopped at 2. Of course, we both agreed they could have used more - I really wish authors would give volume or mass measurements to prevent this guess work. I also think my cutlets should have had more surface area - it was tough to seal the ends with the toothpicks BUT the crispy & flavourful chicken rolls beside a green salad made a great dinner.

      This was another air fryer success! I used a mix of red & orange peppers and yellow & red onions and some minced garlic for the veg (crisper cleanout :) The recipe has you use the airfryer for everything (cooking the steak and then the veg AND THEN the actual egg rolls) so.....no - not how I did it. I used a cast iron skillet for the veg followed by the thinly sliced steak. I followed the 1/4 cup filling guidelines and we got 8 (not 12) egg rolls. They really did crisp up beautifully in the airfryer (the olive oil spray certainly helps). I made a quick dip by mixing leftover ceasar salad dressing with a bit of sour cream & some hot sauce. With a side salad, this made for a great meal. And since I have more wrappers - I have found a southwestern filling (thanks EYB!) to try this with a different spin.

      I made this to use with her chicken & pesto stromboli. I drained my yogurt to be sure it was really thick, I believe I got to the "tacky not sticky stage" and I weighed out 4 even balls. I rolled the 1st to the required 10" circle and all seemed good until I filled it (as directed) and attempted to form the stromboli. The tearing started & continued like a row of dominoes. I rolled the next 2 much smaller/thicker and had the same problems (just not as crazy as the 1st one). Ultimately I used the entire "4th ball" to repair the first 3. Also, there was NO WAY they were going in the air fryer seam side down 1st! It did brown / crisp up nicely in the air fryer but my patience for it was done by then. It has a good tangy taste different from my usual yeast dough and I would MAYBE try this again for flat mini pizzas if I absolutely had no time for yeast dough.....maybe.

      A fridge clean out netted me 2 cups of broccoli florets needing a "home" so I decided to try a new version of broccoli soup. I like this version with the additions of carrots, potatoes and celery but full disclosure means admitting using 2% milk, regular cheese and I certainly puréed mine more throughly than the one in the picture. It is good and was simple to 1/2 and I will probably make it again ....but I'm not sure it's better than my 2 favorite versions (one of which is certainly far richer than this one).

      I normally just poach chicken on the stove but I tried this slow cooker method & it did give me moist, easily shredded chicken with no pot watching. The sauce was good ( with added minced garlic & extra sriracha). I match-sticked the carrots (for better crunch) & added red onion to the mix......the only thing is that we felt the sesame oil was too dominant. I had to sub chopped celery for water chestnuts - we liked both the crunch & flavour from the celery and I did stir in red pepper strips at the end. We wrapped with romaine leaves and agreed that this would be a great summer dinner (which we had on a cold December night :)

      Followed recipe but this was not good. I could only eat half of it. I think the problem was poaching the chicken on low in a slow cooker with just water. The chicken was moist and easy to shred, but the flavor of the poached chicken was kind of funky. Maybe adding salt to the slow cooker water, or cooking it quicker on high would have helped. The sauce should have been great, but the taste of the poached chicken was overpowering. I definitely won't use this method to cook chicken breast again.

      It is not my habit to make dishes like this in the slow cooker but a busy schedule had me making it yesterday to serve tonight. I used cubed pork loin and after reheating it tonight, the pork was beautifully tender in the thick, yogurt based sauce. However, we felt it needed a bit more...something (including veg). In went peas, roasted red peppers, a shot of honey & some Thai basil. It really was tasty served over basmati rice.

      These were very tasty, especially with the slaw on the burger. The color of the burgers was certainly unusually pale, but to be expected with chicken and avocado, and didn't really develop grill char marks like the ones in the photo for whatever reason. The patties are quite fragile, but didn't fall apart when flipping as I was very careful and used a thin spatula. Nice when you want a flavorful burger, but also want to keep it light.

      Delicious. But I made changes. Nectarine (not grilled and diced) instead of peaches, fresh mozzarella diced instead of burrata, and mint instead of watercress. Put into a salad bowl instead of individual plates. Was a hit at a party as a deconstructed substitute of a fruit caprese. Was great!
