      This is a simple recipe but it also works very well so worth bookmarking. I sometimes struggle with getting pan fried fish just right and these came out perfectly when I followed the directions. I put some fresh dill on at the end, which was lovely.

  • Oregano-black olive relish

      This was delicious on grilled coho salmon. I'd hesitate to call it a relish though as it was not as thick as I would expect a relish to be. It was really just a chunky dressing. Added a teaspoon of nonpareil capers for some extra brininess since my Kalamatas were out of a jar. Also used about a half teaspoon of dried oregano, since this was a last minute decision and didn't want to go to the store for fresh oregano.

      Meh. I recently had excellent pan-seared swordfish and hoped this technique would replicate that but it didn't. The fish was dry but not browned enough. I have had better results roasting swordfish.

      We used salmon, and my husband cooked it some other way than indicated because he didn't think the cooking instructions made sense. The roasted garlic and cherry tomatoes was delicious - we just used 1 T olive oil instead of the 1/4 cup in the recipe, and that worked out fine.

  • Roasted mussels

      Delicious! I was looking for something simple but outside the norm to make up for our anniversary dinner plans being canceled due to COVID, and since I rarely make mussels, this fit the bill. I added around 1/2 cup of diced smoked sausage to the garlic, and while I’d do that again, I’d also reduce or omit the salt since the sausage added some saltiness. I was afraid this method would result in dried out or overcooked mussels (15min at 500°!), but they were perfect. Also want to try the leeks/Pernod version!

  • Pomegranate roasted salmon with lentils and chard

      Delicious fall dish. I added 1/2 cup of broth for the lentils because I couldn't imagine 1 cup dry lentils cooking well in 2 cups broth, but perhaps I was wrong. The lentils + chard turned into a little bit of a sludge, partly because that part of the dish was ready about 1/2 hour before serving. Next time I'd wait to add the chard leaves until 4min before serving. The pomegranate seeds were lovely pops of color and flavor. I didn't measure the salt but pretty sure I used more than 1/2 tsp, and the salmon was a bit under seasoned. This is my favorite method of cooking salmon, though - I tend to overcook fish, and with this method it cooks perfectly every time.

      This was not a success. I normally love miso vinaigrettes but this one didn't taste great. The elements of this salad didn't come together well. It felt like lots of work for a very mediocre result. The fish roasting method here was perfect- and I will probably revisit it but the rest of the recipe was a disappointment.

      LOVE! For my taste, double veg! Hold back some of vinaigrette- great taste but maybe too much. I will make this on repeat. I love black rice and was happy to see it here.

      I added some cubed eggplant to the pan which came out good. Next time I will add some fennel to the mix of artichokes and tomatoes as I think this needs a little more of a vegetable base. I used haddock which worked fine and added a breadcrumb crust. An easy recipe I think you can adapt for company too.

      I really liked the way the haddock came out. It was a method I’d never tried and it was super simple and tasty. Will use it again for sure. The sauce was fine, but I don’t think I’ll make it again.

      The cooking time is quick but leave some time to make the gremolata. I didn’t bake with the couscous, used a different grain and just served it over. Used flounder. Very nice dish.

      This was an easy and delicious weeknight meal. The microwaving seemed odd particularly without adding any liquid but it worked perfectly with the juice from the raw leeks infusing the couscous. A real winner will make again.

      I made this but cooked it entirely different as I don’t have a microwave! So, I made the leeks, scallops and couscous, and the dressing but cooked it all stovetop. I added bacon which never hurts!

  • Garlicky spaghetti with clams

      This was a great pantry recipe. This was the first time I have cooked with jarred clams and I didn't love them BUT this recipe has a lot to recommend it. The anchovies sauteed in garlic (I did that instead of adding them straight to the pasta) added a wonderful layer of flavor and in the end we were really happy with this. I liked the flavor so much I may try to add some anchovy the next time I make pasta with fresh clams.

      This recipe is a simple and yummy way to make any kind of white fish. The soup keeps the fish moist, and I love the cooking method off the heat. The flavors are great together, especially with toast on the side. I used bacon instead of pancetta and it worked well.

      Another recipe from this book that is light, but packs quite a lot of flavor. Particularly good with the chile oil and toasted sesame seeds. A solid weeknight recipe. I subbed kelp for kombu and used the halibut.

      This was delicious. I've tried other Cioppino recipes and this was much simpler and quick. Ready in less than an hour, substituted veggie broth for clam juice, used fresh tomatoes in addition to 14 oz canned, skipped the clams and used shrimp, hamachi, mussels and bay scallops. Very adaptable to other fish. Definitely would make agaiin.

      Following the recipe it was a light dinner probably not something I would make again. For my taste I doubled all but fish and leeks, cut fish into bite sized pieces, added red bell pepper and wide rice noodles to make this a noodle dominant meal, delicious-

      This is really quick, simple, and good. My note would be to add some flaky salt post frying. I was cooking for one so I cut the recipe in half, made the batter and did a fresh fry two nights in a row. The batter held up well in the fridge overnight, just needed a good mix on day 2. Instead of a Dutch oven I dried in a small pot. I used local Black Sea bass. Delicious!

      Decent recipe as written, could benefit from a little more seasoning in the cakes. Old Bay or something would be nice. We put them in the fridge to rest for an hour and then dredged them in panko again.

      I followed the technique on cooking fish veg, but skipped the avocado crema. I left out the collards and added bell peppers. I thought the chili powder would be bland, so I seasoned some salmon with a mango spice & Aleppo pepper- and the remaining with a southwest blend. Easy to make and the fish cooked quickly. There was quite a bit of smoke. I had my oven vent on and had to open a door too. But the mango spice salmon, veg & some Secret Aardvark hot sauce was really very good. Would repeat this.

      This was so fresh and delicious, while be very simple! I added a clove of mince garlic confit into the vinaigrette. You end up with a lot of extra vinaigrette, but I look forward to using it as a sort-of chimmichurri on some steak.

      There were a lot of steps to get this one ready, but it turned out great. The carrot-jalapeno-peanut mixture was especially delicious. I would have preferred the cucumbers without the fish sauce mixture; I wished they’d stayed crisp.
